Cooking time about 30 minutes
Ingredients you will need for 4 servings.
2 bundles watercress
1/3 pint milk
I oz. butter
3 tablespoons thin cream
I pint chicken stock
salt and pepper
! oz. flour
1 Wash the watercress and chop
2 Melt the butter and saute the watercress
3 Add the stock and simmer for about 15 minutes.
4 Rub through a sieve and return to the pan.
5 Mix the flour smoothly with the milk, add to the puree and stir until boiling.
6 Simmer for 3 minutes. Correct the seasoning.
7 Just before serving, add the cream and, if liked, a few drops of green food colouring.
8 Garnish with sprigs of watercress.
