Simple lemon soufflé

Cooking time only a few minutes to melt chocolate

Ingredients you will need for 4 servings.

1 lemon jelly
2 teaspoons lemon juice
6-oz. can evaporated milk
Thick cream ( optional )
Chocolate buttons


1. Prepare a -small (6_inches diameter) soufflé
   dish by tying a band of paper round the outside of the dish. The paper should project 2 inches above the rim of the dish.
2. Dissolve the jelly in a little hot water, make up to 3/4 pint with cold water. Leave in a cool place until almost setting.
3. Whisk the evaporated milk, chilled if possible, adding the lemon juice and continue whisking until thick and frothy.
4. Add the jelly, gradually, whisking until well mixed.
5. Pour into the prepared dish and leave in a cool place until set.
6. Remove paper carefully and decorate the edge of the soufflé with cream and add chocolate buttons.
