Castle puddings

Cooking time about 25 minutes

Ingredients you will need for 4 servings.

4 oz. butter or margarine
Grated rind 1/4 lemon
4 oz. sieved plain flour
4 oz. castor sugar
1 level teaspoon baking
2 eggs powder

1. Grease 6 -7 dariole moulds.
2. Cream the butter or margarine with the sugar until soft and white. Gradually beat in the eggs. Add the lemon rind.
3. Fold in the flour and baking powder.
4. Three-quarters fill each mould with the mixture and bake in a moderate oven  (350°F.- Gas Mark 4) until golden brown.
5. When cooked, turn out and serve with a jam sauce.
