Barbecued lamb

Cooking time 20 minutes

Ingredients you will need for 4 servings

1 oz. butter seasoning
1 dessert spoon vinegar
8 oz. cooked lamb
6 oz. long grained rice
1/4 teaspoon dry mustard
1 small packet frozen peas
4 tablespoons red currant jelly

1. Cook the rice in boiling salted water for about 12 minutes.
2. Meanwhile,melt the butter and add the vinegar, red currant jelly and mustard.
3. Heat through and season to taste with salt and pepper .
4. Cut the Iamb into cubes, add to sauce and heat through for about 10 minutes.
5. Cook peas as directed on the packet.
6. Drain the rice, rinse and drain again.
7. Mix rice and peas, place in a hot dish,pile lamb in the centre and serve.
